Throughout the festival, all meals and culinary offerings will be thoughtfully prepared by Xilláa, a restaurant known for celebrating the flavors of the Oaxaca Coast through fresh, seasonal ingredients and locally inspired cuisine.
Nathan Hart, originally from London, where he trained as a chef, has called Mexico home for the past 12 years. Throughout this time, he co-founded a taquería in Ciudad Satélite and has continued to expand his culinary journey through collaborations with renowned chefs, restaurants, and pop-ups across Mexico City. Alongside this, he has developed a series of rotating pop-ups in London, creating inventive Mexican menus that blend tradition with contemporary techniques.
His cuisine is inspired by the flavors he grew up with in London — from Caribbean, Middle Eastern, and Mediterranean influences — as well as his deep appreciation for the diversity, richness, and abundance of Mexican gastronomy.
Throughout the weekend, guests can expect a unique culinary experience that brings these influences together, celebrating the freshness of the Oaxaca coast through seasonal ingredients, locally sourced produce, and dishes inspired by the region’s traditional coastal cuisine.
